Château d'Yquem 1er Grand Cru Classé Supérieur en 1855 3L 2019

Château d'Yquem is the great name of Sauternes, bottled here in a rare 3L double magnum.

The estate's standing was confirmed in the 1855 classification, when it alone was given the rank of Premier Cru Supérieur. The vineyard, on a rise near the village of Sauternes, benefits from autumn fogs off the Ciron, a small, cool river that meets the warmer Garonne nearby. That meeting of waters creates the misty mornings and sunny afternoons that noble rot needs. Semillon and Sauvignon Blanc are picked in successive selective passes, then fermented and aged in new oak, and in weaker years the estate has chosen not to release a wine at all. The 2019 is exotic, floral and open, with lime blossom and lemongrass over a creamy core, more soothing than muscular.

A bottle this size is made for a big occasion. Start chilling it the day before, serve at around 10 degrees and match it with a whole wheel of blue cheese, a platter of foie gras or a spread of desserts. Kept well, a double magnum will develop slowly over many decades.
