Description
Château Lafaurie Peyraguey, 1er Grand Cru Classé en 1855 is one of the first growths of Sauternes, made on the high ground of the commune of Bommes.
Bommes sits alongside Sauternes and Fargues among the five villages entitled to the appellation, on gravel and clay soils above the valley of the Ciron. The mists that rise off that little river in autumn bring the noble rot that shrivels the berries and concentrates their sugar and acidity, and the fruit is then picked in a series of passes through the vineyard, sometimes stretching from September into November. Sémillon carries the blend, with Sauvignon Blanc in support, and fermentation and maturation are in barrel. The estate has been in the hands of Silvio Denz, of the crystal house Lalique, since 2014.
Serve at around 8 degrees with foie gras, blue cheese or a fruit tart. And either format will cellar for decades.
