Château Lapinesse Sauternes is a sweet white from the Bordeaux appellation that defines the style.

Sauternes lies south of the city of Bordeaux where the cold Ciron river meets the warmer Garonne, creating autumn mists that encourage botrytis, the noble rot that shrivels the grapes and concentrates their sugar and acid. Sémillon leads the blend with Sauvignon Blanc. Pickers go through the vineyard repeatedly, taking only affected bunches, which is why yields are tiny.

Serve cold at 9 degrees with foie gras, fruit tart or Roquefort. It will age for decades.
