Château Latour Pauillac 2014

Château Latour Pauillac is a certified organic First Growth whose Grand Vin is drawn exclusively from L'Enclos, the walled vineyard around the château.

Latour sits at the southern edge of Pauillac, the epicentre of the First Growths, and can trace its viticultural roots to the seventeenth century. The estate runs to 92 hectares, of which 47 make up L'Enclos, a block of prime ground surrounding the château and lying just 300 metres from the Gironde estuary. Soils are clayey gravel at the centre and gravelly sand towards the edges, with deep-rooted vines — some a century old — plunging as far as three metres. What sets the Latour style apart from its Pauillac peers is the dense, sticky argile gonflante that ripples beneath the gravel, akin to the clay of Petrus. Technical director Hélène Génin credits those pockets of clay with the wine's muscular power and longevity. Cabernet Sauvignon usually accounts for 90 per cent or more of the blend, with the balance from Merlot and smaller amounts of Cabernet Franc and Petit Verdot. The vines average 60 years and the wine was matured in 100 per cent new oak.

Built for the very long haul; decant well ahead. Serve at 16–18°C with roast beef, lamb rack or aged hard cheese.
