Description
Château Rabaud-Promis Sauternes 1er Grand Cru Classé 1855 is a sweet white from Bommes, one of the five communes entitled to the Sauternes name.
Sauternes owes its existence to the meeting of the cold Ciron with the warmer Garonne, which draws autumn mists across the vineyards and encourages Botrytis cinerea, the noble rot that shrivels the grapes and concentrates their sugar. Pickers go through the vines again and again over several weeks, taking only the berries that are ready, and yields are famously tiny. Rabaud-Promis was classified a first growth in 1855 as part of the larger Rabaud estate, which was later divided; the Promis half has been in the hands of the Dejean family for many years. Sémillon dominates the planting, with Sauvignon Blanc.
Serve well chilled at 8 to 10°C with foie gras, blue cheese or a fruit tart, and Sauternes of this rank will age for decades.
