Description
Château Roc de Cambes is a Côtes de Bourg red made by François Mitjavile, the grower behind Tertre Rôteboeuf in Saint-Émilion.
The property occupies an amphitheatre of south facing slopes above the Gironde at Bourg, an appellation with a long history but modest fame. Mitjavile took it on in the late 1980s and applied the thinking he uses on the right bank: very low yields, exceptionally late picking, gentle fermentation without heavy extraction, and ageing in a high proportion of new oak. Merlot leads the blend on clay and limestone soils, supported by Cabernet Sauvignon and a little Malbec. The result is widely regarded as the benchmark of its appellation, and is priced well above its neighbours as a consequence.
Decant an hour before serving with roast lamb, beef or game birds, or with a dish of mushrooms; it can be broached young, but ten years or more in the cellar is amply repaid.
