Description
Château Sigalas Rabaud Premier Cru Classé 1855 is a Sauternes from Bommes, and the smallest of the appellation's First Growths.
The estate was ranked Premier Cru Classé in 1855 as part of Château Rabaud, which was later divided; the Sigalas half kept the fine slope of gravel over clay above the village of Bommes. Sémillon dominates the plantings, with Sauvignon Blanc adding lift. Cold water from the Ciron meets the warmer Garonne close by, and the autumn mists that follow allow botrytis cinerea, the noble rot, to shrivel the berries and concentrate their sugars. Harvest is by hand in successive passes through the vines, taking only the fruit that is ready, and the wine is fermented and matured in oak.
Serve chilled with foie gras, roquefort or a simple fruit tart; a sensible size for two or three glasses, and it will age for decades.
