Description

Chazalettes & Co. Vermouth de Torino Extra Dry is made to the family's 1876 recipe on a base of Piedmontese Cortese.

The Chazalettes family moved from Savoy to Turin in 1860 and began making vermouth and spirits in 1876. The brand has been revived by Francesca Bava, working with Giovanni Chazalettes, the founder's grandson, and this Extra Dry was the wine that prompted the decision to restart production, its recipe being unlike others on the market. The base is a good-quality Cortese, the white grape of Gavi, into which twenty different herb and spice extracts are blended: Piemonte alpine Artemisia absinthium, lemon balm, bergamot, juniper, cardamom, winter savory and bitter orange among them. Each botanical is prepared separately, with maceration running from a few days to several weeks. At thirty grams per litre it carries less sugar than most dry vermouths, which leaves the wine base audible.

Serve well chilled at 8–10°C, straight over ice with a twist, or in a martini. It also works as an aperitif with olives, almonds and salted anchovies.
