Description
Chionetti Barolo Parussi DOCG is a single-vineyard Nebbiolo from Castiglione Falletto, in the middle of the Barolo zone.
Castiglione Falletto sits on the central ridge of the Barolo amphitheatre, with the valley towards Barolo and La Morra on one side and Serralunga on the other, and its vineyards draw on both of the zone's principal soil types. Parussi is one of its recognised crus, formally mapped along with the rest of Barolo's vineyard names in 2010. Nebbiolo is the only permitted grape, picked late in the season and given a minimum of thirty-eight months of ageing, eighteen of them in wood, before release. Chionetti spent generations at Dogliani working with Dolcetto before extending into the Barolo hills. Barolo took its modern shape in the nineteenth century, when the wine was reworked from a sweeter style into the dry red made today, and it has held DOCG status since 1980.
Decant and serve at around eighteen degrees with braised beef, game or aged cheese; it will reward long cellaring.
