Christian Moreau Chablis 2025

Christian Moreau Chablis is the village wine of a family domaine with holdings across some of the appellation's best ground.

Chablis sits well north of the rest of Burgundy, on a seam of fossil-studded limestone and marl that gives the Chardonnay here its particular cut. The village parcels are hand-picked, pressed whole, fermented slowly in stainless steel and left on lees for several months, with no new oak anywhere near them. Fabien Moreau makes the wines, and the family name has been attached to the town for close to two centuries. Bottled under Diam.

Taut and citrusy with a saline edge. It wants shellfish, oysters above all, though roast chicken and a soft cheese do it no harm. Serve at 10 to 12 degrees.
