Christian Moreau Chablis Vaillon Premier Cru 2025

Christian Moreau Chablis Vaillon Premier Cru comes from one of the best-known premier cru slopes on the left bank of the Serein.

Vaillons faces the grand crus from across the river, a long run of limestone that ripens a shade earlier than the valley floor and carries noticeably more weight through the middle of the palate. This parcel is picked by hand and handled much as the village wine is, in stainless steel with a long spell on lees, but held back longer before bottling. Diam closure.

There is more flesh here than in the village Chablis, with a stony length that rewards a year or two in the cellar. Scallops, turbot, chicken in a cream sauce or a mild washed-rind cheese all suit, at 11 to 13 degrees.
