Description
Christophe Patrice Chablis is village-level Chardonnay from the Kimmeridgian limestone marl that gives the appellation its saline, chalky signature.
Chablis lies well north of the Côte d'Or, closer to Champagne than to Beaune, and that latitude is the first thing in the glass: picking happens late, sugars stay moderate and acidity stays high. The village appellation draws on both banks of the Serein on Kimmeridgian marl, a grey clay-limestone packed with the fossilised oyster shells that growers point to when they talk about the district's salinity. Chardonnay is the only grape permitted. Most village Chablis is fermented and raised in stainless steel or concrete to keep the wine transparent to its soil, with a few months on fine lees for texture and no new oak. The wine is bottled under cork.
The benchmark oyster wine, equally good with shellfish, white fish, chicken and soft cheeses; serve chilled at around 10 to 11 degrees.
