Christophe Patrice Chardonnay Vin de France is an unoaked Chardonnay from a Chablis grower, bottled outside the appellation system.
Vin de France is the broadest category in the French hierarchy and gives a grower freedom to name the grape on the label and to source fruit from parcels that fall outside their appellation boundary, or from young vines not yet admitted to it. In the hands of a Chablis producer that usually means Chardonnay grown on the fringes of the Yonne, on the same broad band of Kimmeridgian and Portlandian limestone marl that defines the district, farmed and picked alongside the estate's appellation fruit. Fermentation for a wine at this level is normally in stainless steel at cool temperature with a short time on fine lees, and no new oak, to keep the fruit clean and the acidity intact. The bottle is sealed under cork.
A crisp, unoaked aperitif white for oysters, salads, goat cheese and simply grilled fish; serve well chilled at around 10 degrees.
