Description
Christophe Patrice Petit Chablis is unoaked Chardonnay from the plateau above the Chablis slopes, where younger Portlandian limestone replaces the Kimmeridgian marl below.
Petit Chablis is not a lesser version of Chablis so much as a different geology. The appellation covers the flat ground and upper edges above the valley, where the soil is Portlandian limestone, harder and less clay-rich than the fossil-flecked Kimmeridgian marl of the Chablis and cru slopes. The result is a leaner, more directly citrus style with high natural acidity and a shorter finish, made to be drunk young. Vineyards here are also the most exposed to spring frost, which is why the district bristles with sprinklers and candles. Vinification is almost always in stainless steel with no oak and a brief period on fine lees, and the bottle is sealed under cork.
A taut, mineral aperitif white and a classic partner for oysters, shellfish, sushi and fresh goat cheese; serve well chilled at 9 to 10 degrees.
