Cidre Séhédic Brut 375ml NV

Cidre Séhédic Brut is a traditional dry farmhouse cider from Brittany, made from Breton cider apples, here in a 375ml half bottle.

Small, tannic bittersweet and bittersharp apples, not dessert fruit, are the basis of Breton cider, and the cidrerie works in that tradition. The apples are picked late and left to mature before pressing, then the juice ferments slowly and cool on its own yeasts. Fermentation is held back so the fruit's tannin and character survive, and the sparkle comes from a secondary fermentation, not added gas. Brut is the dry end of the range, and alcohol is low.

Dry, lightly sparkling and tannic, with baked apple and a faint farmyard note. Serve well chilled at 6–8°C with galettes, pork, shellfish or washed-rind cheese; the small bottle pours a glass or two.
