Cien Y Pico Doble Pasta Garnacha Tintorera is a red from the high inland plateau of Castilla-La Mancha, built on an old Spanish cellar technique.
Garnacha Tintorera is the Spanish name for Alicante Bouschet, a nineteenth-century crossing made by Henri Bouschet and one of the very few varieties whose flesh is red as well as its skin. It found a lasting home in the uplands of south-eastern Spain, where bush vines sit at altitude on poor limestone soils and yield very little. Doble pasta refers to the traditional practice of drawing off part of the juice early, then fermenting what remains over roughly twice the usual weight of skins, so the wine ends up with a far higher ratio of solids to liquid than normal. It is an old-fashioned method that survives in only a few corners of Spain.
Serve at around seventeen degrees with grilled lamb, chorizo or hard sheep's cheese.
