Cien Y Pico ¡En Vaso..!, Bobal is a Spanish red named for the way its vines are trained, on the high plateau of Castilla-La Mancha.

En vaso means goblet, the Spanish term for the low, free-standing bush vine that has been the default across the dry interior for centuries. Trained without wires or posts, the vine shades its own fruit through the worst of the summer and copes with drought far better than a trellised row, though it must be picked by hand and yields very little. Bobal is the variety here, one of Spain's most widely planted reds and among its least known abroad, concentrated in Manchuela and Utiel-Requena on limestone soils at seven hundred metres and above, thick-skinned and naturally high in acidity. Spain still has more land under vine than any other country, a good deal of it planted this way, though the old bush vineyards are slowly giving way to trellis.

Serve at around sixteen degrees with grilled meat, sausages or a plate of manchego.
