Clark Estate Clericus Wild Sauvignon Blanc is a textured white from Marlborough, New Zealand, fermented with wild yeast.
Clark Estate was founded in 1998 by Peter and Jane Clark in the Upper Awatere Valley, the southernmost, coolest and windiest part of Marlborough, at the north eastern tip of New Zealand's South Island. It remains family-owned, with their son Simon as winemaker. The word wild refers to fermentation with the yeasts naturally present on the grapes rather than a cultured strain, a method that gives a rounder, more savoury and complex style than standard Marlborough Sauvignon Blanc.
It suits roast chicken, pork, richer fish dishes and washed-rind cheeses; serve chilled at around 10 degrees.
