Clos de l'Écotard Saumur Blanc is an organically farmed Chenin Blanc from a single two-hectare clos below the village of Courchamps, here in magnum.
Saumur sits at the eastern end of Anjou, where the tuffeau limestone that runs beneath the Loire gives dry Chenin its firm spine. The Clos de l'Écotard is the estate's emblematic vineyard, planted by Michel Chevré between 2009 and 2013 on a clay and limestone slope with occasional outcrops of bare bedrock. With advice from Thierry Germain, Chevré planted at 8,000 vines per hectare, well above the regional norm, using a range of Chenin clones and sélections massales taken from the vineyards of François Chidaine. The clos has only ever been ploughed and has been farmed organically from the outset, with yields held to four or five bunches per vine and picking done by hand. Fermentation starts in stainless steel, the juice is then racked mid-ferment into foudre and 500-litre demi-muid, and after ten months on lees the wine is bottled unfiltered.
Drinking well now and built to develop over five to eight years, with the magnum format slowing that curve further. Serve at 10-12°C with roast pork belly, grilled turbot or a mature comté.
