Clos de l'Écotard Saumur Brut 2021

Clos de l’Écotard Saumur Brut is a zero-dosage Loire sparkling wine led by Chenin Blanc from the sandy soils of Fosse-Bellay.

Saumur has made bottle-fermented sparkling wine on its tuffeau since the early nineteenth century, and Chenin Blanc remains the backbone of the style. Clos de l’Écotard makes two: Les Quarts de Saint-Vincent, a pure Chenin from a tiny parcel near Saumur, and this Brut, drawn mainly from Chenin in La Terre Saint-Bauld with smaller amounts of Grolleau Gris and Cabernet Franc from the Clos de la Chesnaie, both on the sandy soils of Fosse-Bellay. The fruit was picked late by sparkling wine standards, whole-bunch pressed and fermented naturally in a mix of stainless steel and old barrels. The wine then aged around eleven months on lees in bottle before being disgorged with no additions at all, so it is bone dry. The texture is fine and the palate energetic without being austere.

Drink over the next three or four years. Serve at 8°C with oysters, fried chicken or a plate of goat’s cheese.
