Clos de l'Écotard Saumur Rouge 1.5L MAGNUM 2021

Clos de l'Écotard Saumur Rouge is the young Saumur estate's first red, made from old Cabernet Franc vines in an ancient clos and offered here in magnum.

Saumur rouge is Cabernet Franc country, and the lighter, sandier soils of the appellation tend to give perfumed, drinkable wines rather than the sterner style of neighbouring Saumur-Champigny. The Chevré family took on two hectares of Cabernet Franc in the commune of Fosse-Bellay in 2021, an old walled clos whose vines are now between 50 and 60 years old. The soils are light and sandy and are worked by plough. In the cellar Thibaut Chevré follows the infusion model: a maceration of around 20 days with very few pump-overs, so the wine takes colour and flavour gently rather than being extracted, then a short élevage of five months split between stainless steel and sandstone amphora. Nothing here is designed to add weight; the aim is perfume, juiciness and freshness.

Ready on release and best drunk over the next three to five years. Serve lightly chilled at 15-16°C with charcuterie, roast duck or grilled vegetables.
