Clos du Caillou Châteauneuf-du-Pape blanc Les Saffres is the estate's white from the sandy soils that give the cuvée its name.
Clos du Caillou lies at Courthézon on the eastern edge of Châteauneuf-du-Pape. Its walled clos was left out of the appellation when the boundaries were drawn in 1936, because the owner of the day, a keen hunter, refused the surveyors access to his game park. The vines inside that wall therefore sell as Côtes du Rhône despite sitting in Châteauneuf soil. The domaine is run by Sylvie Vacheron and is farmed organically. Safres are the soft yellow sandstone sands of the eastern side of the appellation, quite unlike the galets roulés of the plateau, and they give wines that are perfumed and comparatively light on their feet for Châteauneuf. This white is 40 per cent Grenache Blanc, 30 per cent Clairette and 30 per cent Roussanne, Roussanne supplying the weight and the ageing potential, Clairette the acidity.
Full but dry and balanced, it suits richer fish, roast poultry, veal and hard cheeses; serve at around 12 degrees.
