Description
Clos du Caillou Les Safres is a Chateauneuf-du-Pape named for the sandy safre soils it is grown on.
Safres are the soft sandstone sands that run through the eastern side of Chateauneuf-du-Pape, quite different from the famous galets roules of the plateau, and they are prized for the perfume and the silky, low-grip tannins they give to Grenache. Clos du Caillou sits at Courthezon on this eastern edge of the appellation and farms its vineyards organically under certification. Les Safres is the most immediately approachable of the estate's Chateauneuf cuvees, built on Grenache from these sandy parcels with a little Syrah and Mourvedre for structure. Fermentation is in concrete and ageing takes place largely in tank and older foudre, which keeps the aromatics intact and avoids layering oak over the fruit.
Silky and open in its youth yet capable of ageing, it suits roast lamb, duck and truffled dishes; serve at around 17 degrees.
