Clos Larrouyat Jurançon Sec Comète blends Petit Manseng with a quarter of Camaralet, a variety now almost extinct in the appellation.
Jurançon lies in the foothills of the Pyrenees south of Pau, a cool, wet, high-acid corner of the South West best known for sweet wines from Petit Manseng. The dry version is a more recent story, and Maxime and Lucie Salharang at Clos Larrouyat are among those pushing it. Camaralet covers 10 per cent of their vineyard and brings a spicy, citrus cut to the juicier Manseng; a number of the appellation's more progressive growers have invested in the variety. The Petit Manseng comes from a small south-west facing section that Salharang says gives more power, and he uses only the first press juices. Fermentation is spontaneous and the wines are raised in old barrels bought from Smith-Haut-Lafitte. In cooler years the lees are stirred for depth. Malolactic conversion always runs, to balance the very high natural acidity, and sulphur is kept under 40 milligrams per litre.
Drinking well now and holding five to seven years. Serve at 10-12°C with grilled tuna, roast pork or a Basque sheep's cheese.
