Clos Larrouyat Jurançon Sec Météore is the domaine's core dry white, grown on a rare band of Triassic limestone.
Jurançon sits in the foothills of the Pyrenees south of Pau, a cool, wet corner of the South West where the Manseng family of grapes ripens late and holds ferocious acidity. Météore is a 60:40 blend of Gros and Petit Manseng from vines at Gan, in the commune of La Chapelle de Rousse, on some of the appellation's most austere ground. A rare band of Triassic limestone underlies the site, topped by poudingue — clay mixed with chalk, crushed pebbles and large galet stones washed down from the nearby Ossau valley. The Salharangs work from a cellar no bigger than a medium garage, pressing whole bunches and fermenting naturally in stainless steel before ageing the wine in used oak barrels sourced from Pessac-Léognan.
Ready to drink and good for four or five years. Serve at 10-12°C with grilled fish, chicken with lemon or a young sheep's cheese.
