Clos Thierrière Vouvray Les Murs 2021

Clos Thierrière Vouvray Les Murs is a bone-dry parcel selection of Chenin Blanc from the Vouvray plateau.

Vouvray sits east of Tours on the right bank of the Loire, where a thin layer of clay and flint covers the tuffeau limestone that the whole region is built on and into. Chenin Blanc is the sole permitted grape, and its combination of late ripening and stubborn acidity is what allows the appellation to make dry, off-dry and sweet wines from the same slopes. Les Murs is a parcel selection, bottled with less than a gram of residual sugar, so nothing softens the chalk and the acid line. Wines at this end of Vouvray are built on texture rather than sweetness: the fruit is picked ripe enough to carry the dryness, fermented to completion and left to settle before bottling, which gives the wine weight in the mouth without any impression of sugar.

Lean, dry and structured; serve at 10 to 12 degrees with shellfish, roast pork or hard cheeses.
