Description
Clos Thierrière Vouvray Petrichor is a bone-dry Chenin Blanc carrying under a gram of residual sugar.
Vouvray runs along the right bank of the Loire east of Tours, a plateau of clay and flint sitting on tuffeau limestone, and Chenin Blanc is the only grape allowed. Vines rooted in fissured chalk drain hard and ripen slowly, which is why the appellation can produce wines at every level of sweetness without ever losing acidity. The same rock is quarried for the cellars beneath the plateau, where the cool, even temperature suits a long, unhurried fermentation. Petrichor is finished with less than one gram of residual sugar, about as dry as the appellation goes, a style that shows the site's chalky bite without any cushioning. Dry Vouvray of this kind is also the version that gains most with a few years in bottle, as its firmness softens into the fuller texture that mature Chenin develops.
Taut and completely dry; serve at 10 to 12 degrees with shellfish, white fish or fresh cheeses.
