Clos Thierrière Vouvray Quietude 2021

Clos Thierriere Quietude is a brut nature sparkling Vouvray made entirely from Chenin Blanc with no dosage at all.

Vouvray lies on the right bank of the Loire east of Tours, where Chenin Blanc is the sole permitted variety and the tuffeau limestone subsoil, topped with flint bearing clay called perruches, gives the wines their firm acidity and chalky grip. Traditional method sparkling Vouvray takes its second fermentation in bottle and rests on lees in the same soft limestone cellars that are quarried into the hillsides. Quietude is bottled brut nature, with no liqueur d'expedition added at disgorgement, so the finished wine carries no residual sugar and shows the appellation's naturally taut, apple and quince toned character without softening.

Bone dry and mineral, it suits oysters, sushi, fried whitebait and young goat cheese; serve well chilled at around 8 degrees.
