Clos Thierrière Vouvray Sang de Roche is a dry Chenin Blanc bottled at under two grams of residual sugar.

The Vouvray vineyard sits above the Loire east of Tours on a cap of clay and flint over tuffeau, the soft chalky limestone quarried for the region's buildings and hollowed out beneath the vines for cellars. Only Chenin Blanc is permitted, and because the grape holds its acidity even at high ripeness, growers separate their parcels and decide the style at harvest rather than in the winery. Sang de Roche is a parcel bottling taken to full dryness, with less than two grams of sugar remaining, so nothing softens the appellation's characteristic firmness. Little has been published about the estate, and the notes here describe Vouvray and Chenin Blanc rather than the domaine's own history.

Firmly dry and structured; serve at 10 to 12 degrees with oysters, river fish or a young goat's cheese.
