Clover Hill Exceptionnelle is the estate's prestige sparkling, released only from the strongest years.

The wine is drawn from the best parcels at Pipers River and spends considerably longer on lees than the standard range, which builds the bready, nutty complexity that extended ageing gives. Northern Tasmania's cool maritime climate produces the high-acid base that makes long ageing worthwhile.

Serve at 9 degrees with oysters, roast chicken or a mature cheese. It develops over eight years.
