Description
Coeur Clémentine is a direct-press Côtes de Provence rosé built around Grenache, Cinsault and the rare local Tibouren.
Côtes de Provence is the largest appellation in the south-east of France and the reference point for pale, dry Mediterranean rosé. The fruit for this wine comes from organically managed chalk and clay parcels in the heart of the appellation, around the commune of Puget-Ville. Tibouren is an indigenous variety long associated with the region and said to bring aromas of garrigue, the herby scrub that covers the hills; a splash of Syrah rounds out the blend. Jean-Christophe Audéoud handles the winemaking, using the traditional direct-press method, in which whole bunches are pressed straight away so the juice takes only a little colour from the skins, followed by maturation in a combination of concrete and stainless steel. The wine is sealed under screwcap.
Drink it young and fresh; serve at 8-10°C with grilled prawns, salade niçoise or goat's cheese.
