Description
Coeur Clémentine is a dry Côtes de Provence rosé built around Grenache, Cinsault and the local Tibouren.
Côtes de Provence is the largest of the Provençal appellations and the reference point for pale, dry rosé. The fruit for this wine comes from organically managed chalk and clay parcels in the heart of the appellation, around the commune of Puget-Ville in the Var. The blend leads with Grenache and Cinsault and includes Tibouren, an indigenous variety long associated with the coast near Saint-Tropez and said to carry the scent of garrigue, the herby scrub of the southern hills, plus a small amount of Syrah. Jean-Christophe Audéoud makes the wine by the traditional direct-press method, so the juice takes only the colour it picks up during pressing, and matures it in a combination of concrete and stainless steel. It is finished completely dry.
Drink within a year or two of release; serve at 8–10°C with salade niçoise, grilled prawns or a plate of charcuterie.
