Coffinet-Duvernay Chassagne-Montrachet blanc Les Grands Clos is a premier cru white from the steep slope directly above the village.
Les Grands Clos lies on the hillside behind the village of Chassagne, in the sector around Clos Saint-Jean, where the gradient is steep and the topsoil thin over hard limestone. Whites from this upper section are firmer and more mineral than those grown on the deeper ground towards Puligny, with a stony grip and a long, dry finish rather than early opulence. Coffinet-Duvernay farms across the commune from its base in Chassagne, and the whites are handled in the traditional manner: whole-bunch pressing, fermentation and ageing in oak barrel with a restrained proportion of new wood, malolactic completed in cask and extended ageing on fine lees to build texture before bottling.
Firm and stony with real length, it suits lobster, turbot and Bresse chicken; serve at around 12 degrees.
