Cognac Tesseron Tres Vieux Extreme Noir 1750ml

Cognac Tesseron Tres Vieux Extreme Noir is a blend drawn from ten demijohns dated between 1853 and 1906, making almost all of it nineteenth-century spirit.

Grande Champagne eaux-de-vie mature slowly on the region's deep chalk and can take the better part of a century in wood; Cognac is traditionally moved from cask to glass demijohn after around 75 years, at which point ageing all but stops. Extreme is assembled from ten such demijohns in the Tesseron family's Paradis cellars, with the youngest component from 1905 and the oldest from 1865, and a portion pre-dating phylloxera. The older lots therefore include pre-AOC plantings of Colombard and Folle Blanche alongside the Ugni Blanc that dominates today. Some 70 to 80 years in oak followed by decades in glass produce a spirit that is velvety and supple, of great depth and rancio complexity, opening in waves and closing soft, long and surprisingly fresh. The 1.75-litre bottle is a scale replica of the demijohns it came from, and only 300 were made worldwide.

Serve neat at room temperature in a tulip glass, with nothing alongside it. Give it twenty minutes in the glass before drinking.
