Colet-Navazos Brut Nature 2019

Colet-Navazos Brut Nature is a traditional-method Penedès sparkling wine finished with a dosage of aged sherry.

The partnership between Sergi Colet and Equipo Navazos began in 2003 out of a conversation about what Jerez and Champagne have in common: chalk soils and the importance of aged reserve wines. The question that followed was whether a Spanish sparkling wine could carry something of sherry country in it. The wines fall under the Penedès DO and are made by the traditional method from Xarel·lo and Chardonnay base wines grown in Colet's organically tended vineyards at Pacs del Penedès and Sant Martí Sarroca. The sherry element enters twice: a small amount of flor yeast is used for the secondary fermentation, and the dosage comes from La Bota sherries, here a Palo Cortado. The wine spends three years on lees before disgorgement. It was sold as Extra Brut until 2018, when the name changed because the wine is bone dry.

Drinking well on release and able to hold for some years; serve at around 8°C with oysters, fried seafood or an aged Manchego.
