Colet-Navazos Extra Brut 2018

Colet-Navazos Extra Brut is a traditional-method Penedès sparkling wine dosed with aged Sherry instead of a conventional sugar liqueur.

The Colet-Navazos wines come from a partnership struck in 2003 between Sergi Colet, a Penedès grower, and Equipo Navazos, the Jerez selection house run by Jesús Barquín and Eduardo Ojeda. The two sides had been discussing the parallels between Sherry and Champagne — chalk soils, the importance of aged reserve wines — and set out to make a Spanish sparkling wine that carried something of Sherry country in it. The base wine is grown organically by Colet at Pacs del Penedès and Sant Martí Sarroca and the wines are bottled under the Penedès DO. A small amount of flor yeast goes into the second fermentation, and the dosage is drawn from La Bota Sherries. This bottling is given around three years on lees before disgorgement.

Drink it over the next few years as an aperitif or with oysters, fried fish and salted almonds. Serve at about 8°C.
