Description
Commune of Buttons Day For Night is a very pale Adelaide Hills rosé off eighty-year-old Syrah vines, barely tinted by two days on skins.
The fruit comes off Syrah vines of around eighty years standing on sandy soils. A hot, dry season pulled harvest forward and the pick was split into three batches. The skins were given a light two-day maceration, barely enough to colour the wine, then a natural ferment and twelve months in stainless steel. No oak is involved at any stage. Jasper Button's own description places it closer to a Blanc de Noirs than a rosé, which tells you how pale and how savoury it is.
Serve it properly cold, 10 to 12 degrees, and in a white wine glass rather than a red one. Charcuterie, grilled fish, or a plate of tomatoes with good oil.
