Description
Corofin Carter Ashmore Vineyard Chardonnay is a tiny-volume Marlborough Chardonnay from an organically farmed Fairhall site.
Poor flowering meant no Folium Chardonnay at all that year and very little of this one. The Carter Ashmore vineyard lies in Fairhall on an ancient riverbed, its soils layered silt and alluvial gravels laid down over aeons, and it is farmed organically by Dog Point's viticultural team, planted to the Mendoza clone. Strong biological competition in the soil and a canopy regime that channels the vine's energy into fruit instead of leaf let Mike Paterson pick at full flavour ripeness and lower sugar. Bunches were pressed whole over six hours with no additions, fermented on high solids in one puncheon and one stainless barrel, then left on original lees without stirring until late March.
Generous and fresh at once — layers of Golden Delicious and nectarine, a gently nutty lees character, and punchy acidity holding everything in place through a long saline close. Serve at 12 degrees. Roast chicken, crayfish, or a plate of sashimi.
