Description
Corte Giara Soave DOC is a dry white from the hills east of Verona, built around the Garganega grape.
Soave is named after the walled town at its centre and was one of Italy's earliest defined wine zones, delimited in the 1930s. Garganega is the backbone of the blend, a late ripening variety of real character, and the rules permit a proportion of Chardonnay or Trebbiano di Soave alongside it. The soils divide between the volcanic basalt of the hills and the limestone and alluvium of the plain, a difference that shapes the wines considerably. Fermentation is cool and in stainless steel, with no oak, so that freshness is preserved. Soave was for a long time made in enormous quantity on the flatter land, and its reputation is still recovering from that era. Corte Giara is a label produced under the Allegrini family of Fumane, in Valpolicella.
A natural partner for risotto, white fish and lighter poultry dishes; serve chilled, at around 10 degrees.
