Corzano e Paterno Terre di Corzano is the estate's core Chianti, made from Sangiovese co-fermented with Canaiolo.
The estate sits in the hills of San Casciano, southwest of Florence, within the wider Chianti zone rather than Chianti Classico. Terre di Corzano translates as earth of Corzano, and it is a blend of ninety per cent Sangiovese co-fermented with ten per cent Canaiolo, all hand-harvested from rocky, south-facing slopes. The soils are alberese, the compact clay and limestone littered with pebbles that Tuscans associate with aromatic, finely structured reds. A small proportion of whole bunches goes into the vat, fermentation is with ambient yeasts, and ageing takes place in large 25- and 40-hectolitre botti, a form of élevage still uncommon in a region that reached for barriques for decades. The larger wood softens Sangiovese tannin without leaving an oak imprint.
Approachable now and good for five to eight years. A natural match for ragù, grilled sausage or a tomato-based pasta. Serve at 16-18°C.
