Corzano e Paterno I Tre Borri 2020

Corzano e Paterno I Tre Borri is a pure Sangiovese from the estate's oldest vines, named for the three streams that meet on the property.

Corzano e Paterno lies in the Florentine hills of Chianti, and this is the most serious wine in its range. The fruit comes from three parcels planted by Wendel Gelpke in the 1970s, cropped at a level that yields about one bottle per vine. Since 2015 the wine has been declassified from Chianti Riserva to Toscana Rosso: Aljoschia Goldschmidt felt the Riserva DOCG no longer conveyed what this bottling represents, and preferred the IGT designation. With minimal pushdowns, the wine can spend up to a month on skins before being pressed to 25-hectolitre large-format oak and used tonneaux for just under two years. It is the only red at the estate to see any new barrels, from a Burgundy cooperage, and the oak sits within the fruit rather than on top of it. Ripe cherry, tobacco, dried herbs and an iron-filing savour give the palate its nuance, and the finish carries Sangiovese's sour-plum acidity.

Give it several years and drink over the following decade or more, with bistecca, braised beef or aged pecorino. Serve at 16-18°C.
