Corzano e Paterno I Tre Borri 2023

Corzano e Paterno I Tre Borri is a pure Sangiovese drawn from the estate's oldest vines in the hills of Chianti.

The name comes from the three small rivers that converge on the property. Fruit is taken from three parcels planted by Wendel Gelpke in the 1970s and cropped hard, at roughly one bottle per vine, with the fruit sorted twice, first among the rows and then on the bench, and the bottling made only in the strongest years. Since 2015 it has carried a Toscana Rosso label, Aljoschia Goldschmidt taking the view that the Riserva designation no longer conveyed what is in the bottle. Fermentation is spontaneous in truncated wooden vats and small open-top vessels, maceration runs up to forty days with daily punching down, and two years in tonneaux and 25-hectolitre barrels follow malolactic conversion in wood.

Intense ruby in the glass, with red fruits and a spicy note of cinnamon, then a soft, fruity palate closing on a smoky aftertaste. Serve at 17 degrees, decanted. Bistecca, a wild boar ragù, or pecorino with olive oil and bread.
