Description
COS Ramì Terre Siciliane Bianco is an organic, skin-contact white from Vittoria in south-eastern Sicily, made from Inzolia and Grillo.
COS was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti and Cirino Strano, whose initials give the estate its name, and it has become one of the benchmark producers of natural wine in Sicily. The vines grow at around 230 metres on red soils of limestone and siliceous sand. The grapes are fermented spontaneously on their skins with indigenous yeasts for 7 to 10 days, then the wine is aged for around nine months in concrete vats and a further three months in bottle before release.
Serve at around 12 degrees with grilled fish, shellfish, roast chicken, vegetable dishes, aged cheeses or Sicilian antipasti.
