Description
Croix & Courbet En Chemenot is a topped-up Savagnin from a north-facing plot on blue and grey marl just east of Arbois.
Ouillé means the barrels are kept topped up, so the wine is made in a fresh, non-oxidative style rather than under a veil of flor. En Chemenot is an Arbois lieu-dit east of the village, a north-facing hillside plot at 350 metres on blue and grey marl; Domaine des Cavarodes makes a Poulsard from the same site. The Savagnin was planted in 2004 and the vineyard is worked using organic and biodynamic methods, with Courbet pleased enough by the quality that a portion also goes into the Côtes du Jura blend. Fruit is picked by hand, fermented with natural yeasts and handled with very little sulphur. This cuvée was vinified 90 per cent in cement egg with the balance in a one-year-old barrel, a choice made to bring tension and mineral definition to the density of the vineyard's fruit. It finished at pH 3.1 after malolactic conversion.
Give it a good decant now, or keep it for up to a decade. It suits seafood, Comté and other hard cheeses, roast chicken or grilled pork, at 10 to 12°C.
