Description

Croix & Courbet's Côtes du Jura is a topped-up, ouillé Savagnin drawn from three parcels at Arbois, Passenans and Château-Chalon.

Savagnin in the Jura is made in two quite different ways: under a veil of yeast, which gives the oxidative vin jaune style, or ouillé, meaning the barrels are kept topped up so the wine stays fresh and fruit-driven. This is the second style. The Arbois parcel is En Chemenot and the Passenans parcel is likewise organically farmed, with Croix and Courbet both involved in deciding when to pick; the third parcel, En Beaumont at Château-Chalon, is farmed by Courbet himself and is in organic conversion. The Savagnin vines there were planted in 1962, 1985 and 1991 on gently sloping clay and limestone scree sixty to eighty centimetres deep over grey marl. Every bunch is hand-harvested, lightly crushed and given a three-hour press cycle. Ferments are natural, the wine spends five months in older barrels and then fifteen months in tank, and sulphur is held to 20-30 ppm.

Drinking now and worth five years. Serve at 10-12°C with roast chicken, Comté or a mushroom omelette.
