Croix & Courbet Côtes du Jura En Beaumont Savagnin Ouillé 2021

Croix & Courbet En Beaumont is a topped-up Savagnin from a well-regarded lieu-dit inside the Château-Chalon boundaries, bottled as Côtes du Jura.

Ouillé simply means that the barrels are kept topped up, so the wine avoids the oxidative, flor-influenced character of Vin Jaune and shows Savagnin in a more Burgundian register. En Beaumont is a highly regarded lieu-dit of Château-Chalon, farmed by Courbet himself and currently in organic conversion. The Savagnin vines were planted in 1962, 1985 and 1991, rooted in 60 to 80 centimetres of gently sloping clay and limestone scree over grey marl, material chipped away from the cliffs that ring the village. Courbet believes these chalky soils respond best to wood, so the cuvée is raised in large oak for eighteen months, with no sulphur added until bottling. It is labelled Côtes du Jura because the Château-Chalon appellation may only be used for Vin Jaune. This is the most layered and structured of the pair's Savagnin bottlings.

Worth decanting at this stage, and good for a decade. Match it as you would fine white Burgundy, with roast chicken, scallops or Comté, at 10 to 12°C.
