Croix & Courbet Côtes du Jura En Beaumont Savagnin Ouillé 2022

En Beaumont is a highly regarded lieu-dit of Château-Chalon, bottled here as a topped-up Savagnin under the Côtes du Jura appellation.

The wine is labelled Côtes du Jura because the Château-Chalon AOC is reserved for vin jaune, so a Savagnin raised ouillé from the village must be declassified. Damien Courbet farms En Beaumont himself and the vineyard is in organic conversion. The Savagnin vines were planted in 1962, 1985 and 1991 on a gentle slope of clay and limestone scree, 60 to 80 centimetres deep, over blue and grey marl carved from the cliffs that ring the village. Courbet believes these chalky soils respond best to wood, so the cuvée is raised in large oak for twelve months and then spends a further six months in tank. As across the range, no sulphur is added until bottling. The result is limpid and stone-sculpted, seasoned with chalk, savoury spice, citrus and stone fruit, and it finishes long and salt-flecked.

Give it a decant at this stage and drink over the next eight years, with anything you would serve alongside white Burgundy: roast poultry, veal or comté. Serve at 11-12°C.
