Description

Savadonnay is Croix & Courbet's Jura blend of Chardonnay and Savagnin, and this is the first allocation of it to reach Australia.

The Côtes du Jura runs the length of the region and takes in both of its great white grapes, so a blend of the two is a Jura tradition rather than a novelty. David Croix and Damien Courbet built this cuvée, first made in 2018, from 70% Chardonnay and 30% Savagnin across four vineyards in the Château-Chalon area: Sur Lya, on limestone scree over deeper Liassic grey marl, Le Calvaire and Trémoulette on similar marl, and En Parelle, a biodynamically farmed site facing northwest on deep gravelly white limestone. The intention is a panoramic view of the Jura rather than a portrait of one terroir. Fermentation and maturation take place in 228-litre barrels of five or six years of age, with En Parelle raised in tank, and barely more than 5% of the Chardonnay is aged sous voile under a film of yeast, which adds a hint of apple skin and nutty complexity.

Drink it over the next five or six years with roast chicken, comté or a mushroom tart. Serve at 11-12°C.
