Description
Croix & Courbet Côtes du Jura Savadonnay blends the region's two white grapes, Chardonnay leading and Savagnin behind it.
The name runs the two together, though the split is about seventy-thirty in Chardonnay's favour. Each variety is fermented and aged apart in used barrels before blending, and the wines are made ouillé, with the barrels topped up, rather than under the veil of yeast the Jura is known for. Croix & Courbet began in 2019, when David Croix of Domaine des Croix in Beaune joined Damien Courbet in the Jura to buy organically farmed fruit and make white wine at Nevy-sur-Seille.
Serve at 11 degrees with Comté, roast chicken, a gratin or river fish.
