Croix & Courbet Côtes du Jura Savagnin Ouillé 2022

This is Croix & Courbet's Côtes du Jura Savagnin, blended from Arbois and Château-Chalon fruit and raised topped up rather than under a veil.

Made ouillé, a Savagnin like this shows the grape's structure and citrus drive without the oxidative apple-skin character of vin jaune. The blend draws on two parcels. En Chemenot, in Arbois, is organically farmed and also bottled on its own; Croix and Courbet are involved in the harvesting decisions there. Sur Lya, at Château-Chalon, faces west on shallow clay-silt topsoil with limestone scree over a deeper layer of Liassic grey marl. Every bunch is picked by hand and given a three-hour press cycle with the whole clusters lightly crushed. All ferments run on natural yeasts. The Sur Lya fruit ferments and matures in tank while the Arbois portion goes into used oak, and sulphur is held to 20-30 parts per million, with none added during maturation and only a slight adjustment at bottling.

Savoury and energetic, it is drinking now and will hold for six or seven years; serve at 11-12°C with roast chicken, comté or a mushroom tart.
